There are several things you can manage within Workflow settings:
Email sending server (Gmail, NetHunt SMTP)
Emails sending interval
Email tracking
Weekdays (for email sending)
Duplicate detection actions
Let's go through each of them in detail. In order to access Workflow settings, please click on the three dots on the top right of the screen:
Email sending server
Here you can define the delivery method of the workflow emails: Gmail, NetHunt SMTP or Custom SMTP (if that one is connected):

Email sending interval
With this setting, you can set how much time must pass between the outgoing emails in Workflows. We recommend you use higher intervals for your emails, as this should improve your email deliverability. By default, it's set to "Auto", i.e. emails will be sent immediately.
Email tracking
Here you can choose if you wish to track email opens and clicks within the workflow. You can also set this op on the account level and to do that please check out this article. Also, we highly recommend you set up Custom Domain Tracking for your emails, as this will also lead to better email deliverability. More info on custom domain tracking is available here.
Weekdays
Here you can define the working & non-working days to ensure your automatic emails land at the perfect time for the recipient. This is especially good when you're using the "Wait for time" helper in email sequences. Furthermore, you can define working hours here, so your emails can be sent at a specific time of the day.
To avoid sending emails on weekends, simply go to the 'Send an Email' step and check the 'Only send emails on weekdays' option.
Duplicate detecting actions
With these options, you can choose what happens in case there's a duplicate found within the workflow:
Update existing records with new data: for example, if there's an existing record found within the system, but one of the fields is not filled out, the system will update it with new data. Please note that the previous data will not be re-written, and you should use the update record action in order to re-write info
Discard duplicate and stop workflow: this will not create any duplicate records and will not update the fields that can be (see point a).
Create anyway: a duplicated record will be created.
